Homemade Crackers
Tigernut Crackers (Crispy & Simple)
Ingredients
1 cup tigernut flour
2 tablespoons olive oil or avocado oil
1/4 teaspoon sea salt
1/4 teaspoon garlic powder or onion powder (optional)
1/4 teaspoon dried rosemary or thyme (optional)
1/4–1/3 cup water
Instructions
Preheat oven to 350°F and line a baking sheet with parchment paper.
In a bowl, mix tigernut flour, salt, and any seasonings.
Add oil, then slowly add water until a firm but pliable dough forms (not sticky).
Place dough between two sheets of parchment and roll very thin (this is key for crisp crackers).
Peel off top parchment and score into squares with a knife or pizza cutter.
Bake for 12–15 minutes, then rotate pan and bake another 5–10 minutes until golden and crisp.
Cool completely — they crisp up more as they cool.
Flavor Variations (optional)
Sea salt only (great if you’re sensitive)
Everything-but-the-bagel seasoning (if tolerated)
Cinnamon + pinch of salt for a lightly sweet cracker
Carob + salt for a cozy snack vibe
Storage
Store in a glass container at room temp for 3–4 days
If they soften, pop them back in the oven for 3–5 minutes
