Pumpkin Bread Recipe

Moist, clean, and cozy with a hint of fall spice

Ingredients:

  • 1 cup pumpkin purée

  • 2 large eggs

  • 1/4 cup melted coconut oil (or avocado oil)

  • 1/3 cup monk fruit sweetener

  • 1 tsp vanilla extract

  • 1/2 tsp apple cider vinegar

Dry Ingredients:

  • 1 cup tiger nut flour

  • 2 tbsp carob powder (optional for a warm, rich undertone)

  • 1/2 tsp baking soda

  • 1/2 tsp baking powder

  • 3 tsp pumpkin pie spice

  • 1/4 tsp sea salt

🥣 Instructions:

  1. Preheat oven to 350°F. Line or grease a small loaf pan (8x4).

  2. In a bowl, whisk together pumpkin, eggs, oil, sweetener, vanilla, and vinegar.

  3. In a second bowl, mix all dry ingredients.

  4. Add dry to wet and stir until just combined.

  5. Pour into loaf pan and bake 35–40 minutes. Check doneness with a toothpick in the center.

  6. Let cool fully before slicing for best texture.
