Pumpkin Bread Recipe
Moist, clean, and cozy with a hint of fall spice
Ingredients:
1 cup pumpkin purée
2 large eggs
1/4 cup melted coconut oil (or avocado oil)
1/3 cup monk fruit sweetener
1 tsp vanilla extract
1/2 tsp apple cider vinegar
Dry Ingredients:
1 cup tiger nut flour
2 tbsp carob powder (optional for a warm, rich undertone)
1/2 tsp baking soda
1/2 tsp baking powder
3 tsp pumpkin pie spice
1/4 tsp sea salt
🥣 Instructions:
Preheat oven to 350°F. Line or grease a small loaf pan (8x4).
In a bowl, whisk together pumpkin, eggs, oil, sweetener, vanilla, and vinegar.
In a second bowl, mix all dry ingredients.
Add dry to wet and stir until just combined.
Pour into loaf pan and bake 35–40 minutes. Check doneness with a toothpick in the center.
Let cool fully before slicing for best texture.
