Sweet Potato Almond Flour Waffle Recipe
Makes: about 6–8 mini waffles
Ingredients
1 cup mashed sweet potato (smooth, no chunks)
2 eggs
1/4 cup milk of choice
2 tbsp melted coconut oil or butter
1/2 cup almond flour
1/2 tsp baking powder
1 tsp cinnamon
1/2 tsp vanilla
Pinch of sea salt
Optional:
1–2 tsp maple syrup or honey (totally optional)
Instructions
Preheat and lightly grease your mini waffle maker.
Whisk eggs, milk, oil, vanilla.
Stir in sweet potato until smooth.
Add almond flour, baking powder, cinnamon, and salt.
Scoop batter into waffle maker (don’t overfill).
Cook 4–6 minutes until golden and set.
Let rest 1–2 minutes before removing — almond flour waffles firm up as they cool.
Texture Notes (important with almond flour)
These will be soft inside, lightly crisp outside
If batter feels thick → add 1–2 tbsp milk
If too loose → add 1 tbsp almond flour
