Zucchini Fritters - Recipe

Ingredients (makes about 10–12 fritters):

  • 3 ½ cups shredded zucchini (about 3–4 medium)

  • 2 eggs

  • 4 tbsp tiger nut flour (or another flour you tolerate)

  • 2 tbsp finely chopped onion (optional)

  • ½ tsp sea salt

  • ½ tsp black pepper

  • ½ tsp garlic powder (or 2 small cloves minced)

  • 3–4 tbsp avocado oil or coconut oil (for frying)

Instructions:

  1. Place shredded zucchini in a clean towel and squeeze out as much water as you can (the drier, the crispier).

  2. In a large bowl, whisk the eggs. Add zucchini, flour, onion, and seasonings. Stir until combined. The mixture should be sticky but not watery. If it feels too wet, add another tablespoon of flour.

  3. Heat oil in a skillet over medium heat.

  4. Scoop about 2–3 tbsp of batter per fritter into the pan and flatten slightly.

  5. Cook 3–4 minutes per side, until golden and crispy.

  6. Drain on paper towels and sprinkle with a pinch of extra sea salt.

Tip: These reheat great in the air fryer or oven at 375°F for about 5 minutes.
