Tiger Nut + Almond Flour Pancakes

Ingredients

  • 1/3 cup tiger nut flour

  • 1/4 cup almond flour

  • 2 eggs

  • 2–3 tablespoons milk of choice (start with 2)

  • 1/2 teaspoon baking powder

  • Pinch of sea salt

  • 1/2 teaspoon vanilla extract (optional)

  • Sweetener to taste (optional)

Instructions

  1. In a bowl, whisk the eggs, milk, vanilla, and sweetener (if using).

  2. Add tiger nut flour, almond flour, baking powder, and salt.

  3. Mix until smooth.

  4. Let the batter rest 3–5 minutes to thicken.

  5. Heat a skillet over medium-low heat and lightly grease.

  6. Scoop batter onto the pan and gently spread.

  7. Cook until bubbles form and edges look set, then flip carefully.

  8. Cook another 1–2 minutes until golden.
